1 cup unsalted, unsweetened peanut butter
1/2 cup sugar < I used icing sugar- it was all I had>
Mix it all up, and make tiny little teaspoon sized balls on cookies sheet – use half the batter for the plain golden ones. I get 24 little balls on my cookie sheet.
Flatten with a fork dipped in water and bake at 325 degrees until golden – about 8-10 minutes.
While waiting for the first sheet to bake, I decided to get creative:
add to remaining cookie dough
3 tablespoons of cocoa
1/4 cup rolled oats
1 teaspoon ginger powder
1 teaspoon cinnamon
and bake these the same way.
Yield: 48 tiny little cookie bites and the spicy ones were more popular.
